There is almost no time between now and Valentines Day and maybe you are still at a loss for what to bake for your loved ones?
After the dimple cake seemed to fail with the plums, I knew I wanted to try it again with a smaller fruit. Raspberries seemed like a wonderful addition and where better to bake this up than in a heart. It seems like the perfect way to celebrate a special day.
Valentine’s Dimple Cake
adapted from Baking From My Home to Yours5 tablespoons of butter, softened
3/4 cup of light brown sugar
2 eggs
1/3 cup of canola oil
1 1/2 teaspoons of vanilla
1 1/2 cups of flour
2 teaspoons of baking powder
1/4 teaspoon of salt
1/2 teaspoon of ground cardamom
1 1/2 cups of fresh raspberries, rinsed and dried
1. Preheat oven to 350F.
2. In a medium bowl, beat together the butter and sugar for about 2 minutes or until creamy smooth. Add the eggs one at a time, beating 1 minute after each addition. Beat in the oil and vanilla. Carefully mix in the flour, baking powder, salt and cardamom.
3. Pour into a (8 cup) heart shaped pan, coated with cooking spray and flour. Carefully sprinkle the raspberries into the batter and press them in slightly so they are at least halfway tucked in. Bake at 350F for about 40 minutes or until a toothpick test comes out clean. Remove from oven and transfer to a cooling rack to cool. Carefully remove the cake from the pan. Enjoy with loved ones!

I loved this with plums. I’m sure I’d love it with raspberries!
Beautiful Gretchen.
This cake is delicious. It looks even more delicious with a sprinkling of raspberries!
That is so pretty and perfect for Valentine’s day. Love the cardamom in the cake, too.
This looks so pretty! Perfect for Valentine’s Day
Gretchen, did I tell you I love your new blog design? I think I did. If I didn’t, then I am repeating it:) It’s lovely.
Such a pretty looking cake!
This was one of my favorites from this past year. Looks stunning set on that tray in the grass! {I’m so envious of your grass!} Can I have a piece??
What a beautiful cake. And I LOVE raspberries.
That looks beautiful Gretchen. I think it’s lovely with raspberries…. yummy
This cake is impossibly cute, and perfect for Valentines Day. Love it!
this cake looks so nice . Really great for Valentine’s day. Happy Valentine’s day!
This does look good, but I need to know when the raspberries are added? Do you just sprinkle them on top of the batter before it goes in the oven?
Caitlin, thank you for noting that! Yes, once the batter is poured into the prepared pan, “sprinkle” the raspberries over the batter. I placed them a bit more carefully to be sure they were dispersed well and poked them in slightly. I will adjust the instructions in the post. Again, thank you! ~Gretchen
This looks so pretty! I love raspberries but don’t think I’ve had them in a cake like this.
