Valentine Dimple Cake

valentine dimple cakeThere is almost no time between now and Valentines Day and maybe you are still at a loss for what to bake for your loved ones?

After the dimple cake seemed to fail with the plums, I knew I wanted to try it again with a smaller fruit. Raspberries seemed like a wonderful addition and where better to bake this up than in a heart. It seems like the perfect way to celebrate a special day.

Valentine’s Dimple Cake

adapted from Baking From My Home to Yours

5 tablespoons of butter, softened
3/4 cup of light brown sugar
2 eggs
1/3 cup of canola oil
1 1/2 teaspoons of vanilla
1 1/2 cups of flour
2 teaspoons of baking powder
1/4 teaspoon of salt
1/2 teaspoon of ground cardamom
1 1/2 cups of fresh raspberries, rinsed and dried

1. Preheat oven to 350F.

2. In a medium bowl, beat together the butter and sugar for about 2 minutes or until creamy smooth. Add the eggs one at a time, beating 1 minute after each addition. Beat in the oil and vanilla. Carefully mix in the flour, baking powder, salt and cardamom.

3. Pour into a (8 cup) heart shaped pan, coated with cooking spray and flour. Carefully sprinkle the raspberries into the batter and press them in slightly so they are at least halfway tucked in. Bake at 350F for about 40 minutes or until a toothpick test comes out clean. Remove from oven and transfer to a cooling rack to cool. Carefully remove the cake from the pan. Enjoy with loved ones!
