Passionfruit Torte

passionfruit-torteWould you ever forgive me if I didn’t let you in on this? I am not sure I would forgive myself! I am just so relieved I saw it in time!

You see, a few months ago, I was overwhelmed. Overwhelmed with life, overwhelmed with people, overwhelmed with culture. But mostly, I was overwhelmed by my google reader. I cut back. Way back. I left myself with less than a third of the blogs I had minutes before. Even though I had found scrumptious recipes before, I somehow cut this blog from my regular feeds. Maybe I thought it would be too tempting. Maybe I knew I just couldn’t handle what she would send my way.

passionfruit torte3Just days ago, I ran across Baking Bites again and of course, added it back to the Reader. (Yeah, don’t ask me what I am up too now. I am sure things are going to get turned upside down again in the next few weeks and I will probably do another clean up soon. But this time, I know this is one I cannot touch.) All that to say that this week, she wrote about a Lemon Torte. A mouth watering, can’t get you out of my mind, nothing else will satisfy kind of torte. Sure, I bookmarked it like all other things that jump off the page at me.

Passionfruit Torte1But I didn’t stop there. I made it today. You remember, I had to let Lemon down gently a few months ago and normally I find Lime a perfectly acceptable replacement. But not this time. This time called for drastic measures. I was going all out. I was going to fulfill my passion. Passion for Passionfruit. I just cannot get enough!

Passionfruit Torte

adapted from Baking Bites, serves 8

1 1/2 cups of flour
1/2 cup of almond meal
2 teaspoons of baking powder
1/4 teaspoon of salt
100g of butter, softened
1 cup of sugar
3 large eggs
1/2 cup of passionfruit pulp

Passionfruit Glaze

3 tablespoons of passionfruit pulp
2/3 cup of powdered sugar

1. Preheat oven to 350F. Lightly grease a springform pan and line the bottom with parchment paper.

2. In a medium bowl, whisk together flour, almond meal, baking powder and salt. In a large bowl, cream together butter and sugar until light. Beat in eggs one at a time, waiting until each is fully incorporated before adding the next.

passionfruit torte23. Mix in a third of the flour mixture, followed by half of the passionfruit pulp. Add another third of the flour mixture, then the rest of the passionfruit pulp and the rest of the flour mixture. Stir gently, just until combined. Pour into prepared pan.

4. Bake at 350F for 35 minutes, until a toothpick inserted into the center comes out clean. Cool cake in the pan on a wire rack for 15 minutes.

5. To prepare the glaze, stir the passionfruit pulp and powdered sugar together in a small bowl. Spoon over the top of the cake and spread gently. Allow the cake to cool completely in the pan.

  • I’m with you on the need to cut back on feeds. I have something like 200 unread posts to catch up on! Yikes!
    This torte looks fantastic and the glaze is calling to me, “make me … eat me!” Yum!

  • I gave up on Google Reader, I never got through them. I just added a blogroll that showed snippets to my sidebar so I can see what’s new, I find it easier to keep up..
    Your torte is beautiful! I have never had passionfruit before, I guess it doesn’t travel well. It sounds heavenly!

    I am often overwhelmed, but I like organizing my feeds, starring my feeds and reading them all from inside the reader. So I am stuck there for now still. I hope you get the chance to try passionfruit, it really is a favorite of mine. ~Gretchen

  • this torte looks delicous. I think with lemon is awesome and with passion fruit more so :) I ve never tried passion fruit since I don t find it here , wish to try it though :)

    But anyway, the torte looks incredible. I have only had passion fruit once but it was definitely delicious.
