So many times, I see things cross the blogs that I want to make. I star them, but most often I just forget about them. They are dinners I want to try, cakes I want to bake, desserts I want to create. Star. Star. Star.
I was starring one blog so often that I just had to stop. I know if I am looking for a baked goods, I can visit Pittsburgh Needs Eated and find something that will suit my craving.
These cookies have become a regular in my kitchen since I started making them last week. It seems I kept finding reason after reason to make another batch, until I ran out of coconut! I will be heading to the market to pick up more coconut in order to make more Ranger Cookies this week!
Ranger Cookies
Adapted from Pittsburgh Needs Eated
(who adapted them from Emily Luchetti’s A Passion for Ice Cream)
Makes 24-30
100g of butter, softened
1 cup of azucar rubia (substitute half white, half brown)
1 teaspoon of vanilla extract
1 large egg
1 cup of flour
1/2 teaspoon of baking soda
1/8 teaspoon of baking powder
1/4 teaspoon of salt
1/2 cup of unsweetened grated coconut
1/2 cup of roasted peanuts, coarsely chopped (substitute other nuts like pecans or walnuts)
1/2 cup of rolled oats
1/2 cup of chocolate chips
1. Preheat the oven to 350F.
2. Cream butter and sugar together in a large bowl. Stir in the vanilla and the egg. Add the flour, baking soda, baking powder and salt; stirring to combine. Gently stir in the coconut, peanuts, and chocolate chips.
3. Spoon dough by the tablespoonful onto a large baking sheet. Bake at 350F for 10-12 minutes, or until golden brown. Remove from the oven and cool cookies for 2 minutes on the baking sheets before transferring them to a wire rack to cool completely.

I love peanuts, oatmeal, chocolate, and coconut, so I can’t see how I wouldn’t love these!
I’m thinking they would probably take well to whole wheat flour too, which is nice since somehow I never seem to have all-purpose in my cabinet. I really want to “think spice” this month but I have kind of a hate-hate relationship with cloves! I love the idea of cloves though, so maybe I’ll see what I can do…
I’m so happy you like this recipe! I’ve been making it repeatedly too…I like that the recipe only makes about 2-2.5 dozen and that the cookies are so versatile!
