Master Easter Candy Baker

Easter has passed and for many of you, it has left it’s remnants…candy.

Five years ago, easter candy was near to non-existent. The holidays were not celebrated with things that required extra expenses. Sure there was typical foods for the entire Holy Week, or I should say food…fish. The fish is widely consumed by families and for that reason the prices all go up so that everyone is essentially required to pay more. (I know, that whole “holiday sale” hasn’t quite caught on here.)

These days, there are a few Easter candies which have made their way into the stores. The main one is a hollow chocolate egg filled with a “surprise.” I have never bought one and have no idea what the surprise might be, which frightens me a bit. There are also wildly expensive ones like small bags of chocolate eggs which cost about $10. Mind you, they are not Cadbury.

This year, I treated myself to milk chocolate eggs with almond bits inside. They were delicious, but of course I could not eat them all myself. I decided to share by baking with them.

Easter Blondie Bites
Adapted from Smitten Kitchen
Makes 24

100 grams of butter
1 cup of azucar rubia (substitute half white & half brown)
1 eggs
1 teaspoons of almond extract
1 cups of flour
1/8 teaspoon of salt
12 chocolate almond Easter mini eggs, halved

1. Preheat oven to 350F.

2. Melt butter and sugar in a medium sized saucepan, then remove from heat; stir to combine. Allow the mixture to cool; then add eggs and almond extract (tempering the eggs if necessary), stir to combine. Sprinkle flour and salt over the mixture, then stir until well combined.

3. Fill mini muffin cups, coated with cooking spray, with about 1 tablespoon each. Place a mini-egg half in the center of each, pressing down slightly.

4. Bake for 20-25 minutes at 350F, or until the blondie part is baked when tested. Remove from the oven and cool for 5 minutes in the pan on a cooling rack.
