2 cups cooked brown rice
1/2 C sun dried tomatoes, reconstituted in 1 cup boiling water
1.5 Tbsp olive oil
4-6 C fresh spinach leaves
2 garlic cloves minced
1 cup queso fresco, crumbled
1 tsp dried oregano
1 tsp salt
1/2 tsp black pepper
2 cups garbanzo beans (1 can), rinsed and drained
2 Tbsp sliced almonds
lime wedges
First, saute the spinach in a bit of oil with the garlic. Then toss your rice, tomatoes, greens, cheese, oregano, salt & pepper, chickpeas and nuts together. Serve with lime wedges.
Should serve 5ish, it is good!!!
